Building on the success of his two Parisian restaurants, Eloy Spinnler continued his quest for the 7 deadly sins by opening Envie le Banquet in September. On the menu at this Marais address is a 500-square-meter all-you-can-eat buffet on two floors, fine produce and a spectacular decor. In short, it’s a truly giant, gourmet and responsible banquet that’s already got us salivating from appetizer to dessert.

Drawing crowds at the door of Orgueil et de Colère, but also on Youtube (220k subscribers), chef Eloy Spinnler is on a roll at the moment, and he doesn’t seem ready to stop there. As proof, he’s already behind the stoves of his latest project, Envie le Banquet. At the start of the new school year, the doors of this XXL buffet opened to us, and as usual, gourmet delights are on the menu, with a focus on zero waste.
Organized over two floors, Envie le Banquet offers a modern, generous and responsible interpretation of the all-you-can-eat buffet. Orchestrated in the style of the Grands Buffets de Narbonne, the banquet features around a hundred homemade dishes, to be enjoyed without moderation. As you browse through the buffets, you can look forward to 60 savory offerings, as well as 24 cheeses and some 15 desserts. Everything is organized according to a thematic pathway that includes, for example, the market gardener, the scaler, the cheesemaker and the patissier.
During our visit, it was difficult to choose from among all the starters available, so we had to pick and choose. Sourced charcuterie, a variety of salads, pâtés en croute, eggs mayo and other dips, to name but a few, are among the delicious offerings of the day. In front of the chef, gourmands line up, salivating over the recipes on the menu. Poultry, lemon risotto, blanquette, gnocchi, cacio and peppe and even a new take on the kebab: there are a thousand ways to feast at this joyous banquet table. And to finish, we save a little room for the 24 cheeses that make up the fromager’s buffet and close the curtain with one of the many desserts.
Once again, and this is a sine qua non at Eloy Spinnler, this restaurant is demanding when it comes to ecology. For example, and this is a real challenge for an all-you-can-eat buffet, zero waste will be the order of the day, with pre-cut portions and products recycled in their entirety.
All that’s left now is to wait patiently until autumn to discover this new temple to good eating.
