After Orgueil, it’s time for Colère and its festival of flavors
For lovers of taste, textures and flavors, and fervent advocates of better food, a brilliant new address combining all these aspects has just opened its doors in the 9th arrondissement. Led by young, talented chef Eloi Spinnler, the Colère brigade delights its new audience every day. Following in the footsteps of Orgueil, the chef’s much-loved first Parisian restaurant, all the ingredients that make a good address are here once again.
At the crossroads of the Palais Garnier, the Folies Bergères and the Musée Grévin, Colère has established itself in a prime location in the heart of Paris. Once through the restaurant’s doors, we are immersed in a warm, ochre-tinted ambience. From the imposing decor to the furniture and candles, everything has been richly decorated and tastefully thought out, including a large, hand-carved fireplace depicting a dragon’s head.
And it’s precisely in these tasteful surroundings that our culinary adventure can begin. If small tantrums make big reliefs, then you’re in for a treat thanks to Chef Spinnler and his “sweetly and healthily angry interpretation of his French cuisine.”
And at the genesis of anger, we find the trigger, so what better way to start than with a good appetizer to share? Whether it’s a garnished Russian roulette, pâté en croute or a plate of cured meats, the kick-off is given in the best possible way, with plenty of flavor. But our real favorite is the mayonnaise volcano eggs, deliciously seasoned and devilishly effective.
Then it’s time for expression, with mouth-watering plates like the Camargue red rice with cacio e pepe or the gnocchi à la romaine with spinach, comté cheese and poached egg. For bigger appetites, succumb to the explosion of three more substantial dishes: vegetable tart, pork chop and hake. Finally, once the storm has passed, it’s finally time for resolution, synonymous with sweet pleasures, some revisited with a little spice for a welcome spicy twist.
