And after Clara Luciani, it’s Kyan Khojandi ‘s turn to take part in the game, imagining an original dish with chef Eloi Spinnler. Today we’re talking about “Liane Khojandi”, a tribute to the Bref creator’s Iranian roots.
Kyan Khojandi and Eloi Spinnler: a gourmet crossover for student mutual aid
At the helm of Orgueil ( 11th arrondissement), Colère (9th arrondissement) and soon a third restaurant, Eloi Spinnler continues his commitment to responsible cuisine with a new ambassador in the person of Kyan Khojandi. Both sponsors of Linkee, the first sustainable food aid association for students in France, they created an original dish, now on the restaurant’s menu. All profits generated by this dish are donated to the association, which fights against student poverty.

A reworking of the Iranian ghormeh sabzi, this dish dubbed “Liane Khojandi” is a delicious vegetable stew. Normally served with veal, it is now available à la carte in a vegetarian version. Composed of leeks, kidney beans, asparagus, peas, black garlic, red onions, chard and chili pepper, it’s also packed with herbs such as parsley and fenugreek. And the little gourmet bonus is the presence of labneh (salted and drained cottage cheese) on the plate. A real delight, that will reconcile anyone with vegetables.
