While the Jeux de Paris are in full swing, a gold medal of a different kind has been added to the French record of achievements. Every year at the end of August, chefs from all over the world gather in Tokyo, to compete in the World Sushi Cup. Since 2013, non-Japanese chefs have been competing against each other with the aim of showing off their skills and winning the precious sesame: that of being elected World Sushi Champion. And for this 2024 edition, it’s Vincent Broggi, a French chef, who has put everyone in agreement with his creations.
Spreading the word about Japanese know-how while encouraging chefs from other countries is, in a way, the credo of this unusual event. Under the watchful eyes of the Itamae (sushi chefs) in attendance, the many participants displayed all their creativity, finesse and mastery over two days of richly varied events. And at the end of the suspense, it was Bordeaux’s Vincent Broggi who was elected from all the chefs in attendance. The young chef, who runs the Morimoto restaurant in the heart of the hôtel Mondrian les Carmes, won over the jury with his performance. But since good news never comes alone, you should know that it’s two other Frenchmen who complete the podium! Chefs Jérémy Séguda and Alexis Luong, from Chamonix and Nice respectively, placed 2nd and 3rd!
