Right in the heart of Paris, a new brasserie is set to delight food-loving Parisians. Brasserie Casel will open at 16 Avenue Victoria in the fall, just a few meters from the Théâtre du Châtelet, in a setting directly inspired by the world of entertainment. Behind the project is La Nouvelle Garde, the group that has already revived the spirit of the great French brasseries with Bellanger, Dubillot, Martin, and Brasserie des Prés.
A brasserie designed like a theater near the Châtelet
In the basement, a fully glass-enclosed aging cellar will allow diners to watch the cuts of meat as they age, before they are sent to the kitchens. Beef, duck, pork, veal, and even guinea fowl: the house specialty will be featured across all meats, serving as the restaurant’s signature.
Although the menu has not yet been unveiled, Brasserie Casel is expected to remain true to La Nouvelle Garde’s model: French cuisine prepared on-site, using fresh, seasonal ingredients sourced directly from producers whenever possible.
Just a few steps from the Théâtre du Châtelet, the dining room will echo the style of Paris’s grand salons with large burgundy velvet curtains, Versailles-style parquet flooring, olive-colored upholstered armchairs, and tables covered with white tablecloths. Posters inspired by the capital’s bygone evenings are set to complete this cozy atmosphere, as is customary at La Nouvelle Garde.
The choice of meat also harkens back to the history of the nearby Les Halles, when this part of the 1st arrondissement was home to a large portion of Paris’s food trade. Brasserie Casel will thus seek to bring together the neighborhood’s two histories: that of the theaters and that of the former “belly of Paris.”
