At the helm is Julien Duboué, a chef from the Landes region who notably appeared on Top Chef. His idea was to create a welcoming place that captures the generous spirit of the large, lively tables of the Southwest, while maintaining a high standard for ingredients and recipes.

Even before sitting down at a table, it’s hard not to stop in front of the bakery section. The breads are made with organic flours and natural sourdough. Baguettes, country breads, and house specialties are made on-site, as are the pastries that draw neighborhood regulars every morning.
But it’s in the dining room at the back where the real action begins. Here, there’s no standardized buffet or mass-produced dishes kept warm for hours. The menu changes with the seasons and highlights fresh ingredients prepared on-site.
