Founded at the end of the 11th century, the abbey joined the Cistercian order very early on and quickly became very prosperous. In the 13th century, it became one of the major religious centers of southern France. Its history is closely linked to that of the crusade against the Cathars, and Fontfroide spread its influence throughout the Languedoc region before gradually declining from the 15th century onwards.
In terms of architecture, the complex, faithful to Cistercian principles, favors sobriety and balance. The abbey church is impressive for its proportions and soft light, filtered through high openings. The cloister, the true heart of the abbey, invites visitors to stroll through its elegant galleries, arches, and perfectly designed central garden. Surrounding it, the chapter house, dormitory, former refectory, and convent buildings allow visitors to follow the daily life of the monks and understand the organization of a large medieval abbey.
After the French Revolution, Fontfroide was sold as national property and converted into a farm. However, the site escaped ruin when it was bought at the beginning of the 20th century by the painter and collector Gustave Fayet. His family undertook an ambitious restoration, revived the gardens and gradually opened the abbey to the public. Today, the estate still belongs to his descendants, who continue this work of enhancement.
The visit is not limited to the buildings, as the carefully restored terraced gardens offer a beautiful walk among rose gardens, Mediterranean flower beds, and ponds. From there, the view opens up onto the surrounding hills and vineyards that surround the abbey. Fontfroide is also a renowned wine estate. The vineyard produces several vintages that can be discovered during tastings, extending the visit with a gourmet experience.
