
We’ve been dreaming of this for months, years even, and now a Burgundian has done it! The capital’s first truffle bar opens its doors to the public, and it’s a highly gourmet and unusual new address on the Paris culinary scene.

In the heart of the Marais district, just off Place des Vosges, is Baratruf, a truffle grower’s counter that lives up to its name. At the helm is Pierre-Ivan d’Arfeuille, aka Piv. Originally from Burgundy, he grows his truffles on the family estate in Pignol, where he has planted over 1,500 trees. Cooked by infusion in a fatty substance, then cold-cooked, the mushrooms are then frozen so that they can be offered at full maturity throughout the year. It’s during thawing that the truffle releases all its aromas, frozen at the right moment.
Less famous than its Périgord cousin, the Burgundy truffle is just as tasty and intense in flavor. In any case, it’s this exceptional product that we’re working on here, and making it available to as many people as possible. When it comes to recipes, Baratruf offers carpaccio, burrata, focaccia and even Laughing Cow with truffle. All this among a myriad of other dishes, all of which go perfectly with the black diamond. And to source its ingredients, Piv has turned to local producers and only buys direct!
It’s a festival of flavors, and a perfect match for the house’s other specialty, the spritz! Alongside all the Burgundian wines, there are almost 30 different versions of the cocktail made with prosecco, which here is drawn on draught! Yes, Campari and Aperol are really just two of an infinite number of options!
