So don’t panic—while the broth your noodles are swimming in is indeed green, the matcha is well blended with a chicken stock and a creamy pistachio paste. The result? The bitterness so despised by matcha’s detractors is gone, andthe matcha notes are present but very subtle on the palate. As for the rest of the ramen, it features very tender pieces of duck breast fillet, a creamy soft-boiled egg, and of course, noodles!
