“140°. Not a degree more. Not a degree less,” says Mallory Gabsi about the ideal temperature for making the best fries! And while it feels like 1,000° in Paris, the Belgian chef’s (former Top Chef contestant) star fry shop opens this Saturday in Paris… with a surprise in store for the first 100 customers. “Malou” definitely has what it takes…
140°: Mallory Gabsi’s Belgian fry shop is coming to Paris!

Remember: back in 2020, we met Mallory Gabsi on Top Chef, and the young Belgian was already stealing the show! During the famous “La Guerre des Restos” challenge, Malou (as her friends call her) teamed up with her partner Adrien Cachot to come up with a street-food concept inspired by Belgian fries. The starting point? The perfect cooking temperature for the best fries: 140°! After *Top Chef*, Mallory and Adrien opened their pop-up fry shop in Paris, on a houseboat. Then, in Brussels—the capital of fries—Malou opened her eponymous restaurant: 140°!
Free fries this Saturday for the first 100 customers

And today, the adventure continues in Paris! This Saturday, June 27, young chef Mallory Gabsi is opening his famous 140° fry shop at 6 rue des Petits Carreaux, in the 2nd arrondissement. On the menu: fries, of course, but that’s not all. Food lovers will especially enjoy sampling gray shrimp croquettes, juicy “double beef, double cheddar” burgers, or a beautiful entrecôte steak served with fries topped with 36-month-aged Comté cheese. As for the cone of fries, prices vary depending on size, ranging from €4.20 to €7.70!
The chef’s surprise? The first 100 customers at the opening (scheduled for noon) will get a FREE cone of fries… What better way to kick off the weekend than with some fries! Deal hunters, get ready for Mallory’s crispy fries!
