In Paris, bouillon restaurants are popping up everywhere, but the next heavyweight in the genre has chosen to set up shop just across the ring road. On October 1, 2026, Bouillon sur Seine will open on Île Seguin in Boulogne-Billancourt, featuring a massive dining room and a terrace with about 100 seats. The project draws inspiration from these popular canteens, but on a scale rarely seen in Paris.
Bouillon sur Seine: 1,100 square meters and a terrace overlooking the river
With 1,100 square meters and 570 seats, Bouillon sur Seine clearly sets the tone. The restaurant will even claim the title of France’s largest bouillon restaurant. About 100 people will be able to sit on the terrace facing the Seine, while large floor-to-ceiling windows will open the dining room onto the river.
The restaurant will be located in the new Pointe des Arts neighborhood on Île Seguin, where restaurants, shops, and a movie theater are gradually opening. It will be easier to reach from Paris than one might think: the northern footbridge now directly connects the island to the Pont de Sèvres area, the terminus of Line 9.
Behind the project are Christopher Préchez and Benjamin Moreel, two names already well-established in the world of bouillons. The duo notably helped revive the Petit Bouillon Pharamond before working on the Bon Bock in Montmartre, the Bouillon Alcide in Lille, and the Petit Bouillon de la Gare in Asnières-sur-Seine. Joining this duo will be executive chef Nicolas Roudier, who has previously worked at L’Arpège and Le Bristol.
A new spot for traditional bouillon on Île Seguin
The full menu hasn’t been revealed yet, but the restaurant promises to stay true to the bouillon tradition: French culinary classics, daily specials, and affordable prices. Service will run continuously, from morning through evening, and will also feature homemade lemonades and takeout options.
The main challenge will be maintaining the lively, down-to-earth atmosphere of a traditional “bouillon” in a dining room seating 570. Between its proximity to the Seine Musicale, the waterfront terrace, and the new venues on Île Seguin, Bouillon sur Seine is sure to attract plenty of foot traffic.
