A Chicago speciality, the dish has had a hard time catching on across the Atlantic and especially in France, the land of gastronomy and refinement. That was until the dish’s first representative had the bright idea of establishing the concept in the 18th arrondissement.
Chicago’s deep dish pizza now available in Paris
The first establishment to serve the eponymous dish, Deep Dish Pizza has just set up shop in the 18th arrondissement, on avenue de Saint-Ouen to be precise. As the name suggests, the restaurant offers the famous American dish in 1, 2 or 3-4 person versions. In classic margherita, pepperoni, 4-cheese or queen versions, the pizza here is served with a thick but crispy dough, topped generously with tomato sauce and cheese.
What is deep dish pizza?
To return to the origins of the deep dish, we need to go back 80 years, when Ike Sewell and Riccardo, the founders of Pizzeria Uno (still in business today) had a rich idea. Wishing to create a more substantial dish than a simple pizza (at the time considered a snack), they came up with the deep dish, a version with a much deeper, richer crust. Unlike the classic pizza, here the cheese is first placed directly on the dough, then covered with tomato sauce.
