On the forecourt of Notre-Dame de Paris on May 8, the smell of warm bread wafted through the air, attracting curious onlookers and enthusiasts to the national final of the Best Traditional French Baguette competition. This year, Zouhair Byadi, an artisan baker from Meulan-en-Yvelines, was awarded the prestigious first prize for his expertise and passion for this symbol of French gastronomy.
The competition required finalists to produce, before the public’s eyes, forty baguettes meeting strict criteria: golden crust, honeycombed crumb, balanced taste and compliance with the 1993 decree on “French tradition”. The jury, made up of professionals and enthusiasts, was won over by Byadi’s baguette: a fine, crisp crust, a light crumb, a wheaty flavor sublimated by a hint of hazelnut.
