France’s best millefeuille just 1 h from Paris
For the second year running, the serious competition for France’s best millefeuille has found its new winner. And surprise, the bakery is located 1 h from Paris, in Chantilly in the Oise region. And it’s young pastry chef Florian Grech who has won the precious sesame. For him, it’s the ultimate accolade, having spent several months working on puff pastry, textures and pastry cream! In fact, he had already been awarded a gold medal in 2024 for his apple tart!

His millefeuille is everything you’d expect from a good pastry, if not more so: crisp, well-balanced on the palate, yet gourmet at the same time. An elegant pastry, far from easy to make! According to the competition organizers, the millefeuille is quite simply a “symbol of French pastry-making”, requiring perfect mastery of execution and a millimeter-perfect balance of textures. A highly demanding competition, then, in which the six candidates had to create their pastries live in front of a panel of professionals, including some of France’s best workers. Not only the visual aspect, but also taste and technique were scrutinized and judged!
And while Florian’s “O Flo’ Gourmand” pastry won the gold medal, it was the pastry chef from “La Parisienne”, in the Paris region, who took the prize for taste!
