
January 6 is Epiphany, but it’s also the day of the galette des rois. This tradition dates back to the time of the Romans, who celebrated the winter solstice with a round, golden cake reminiscent of the sun. A real bean was randomly placed in the cake, to represent fertility. As today, whoever found it became king for a moment. This year, chef Thibault Leroy had the wonderful idea of using hazelnuts in his galette des rois. At the heart of the inverted puff pastry are Piedmont hazelnuts and gianduja for a very gourmet creation. Sprinkled with roasted hazelnuts, with touches of buckwheat praline and pieces of gianduja, the galette is simply delicious! Available from pastry counters from January 2 to 31, 2025.

Délicatisserie and its creation in homage to Notre Dame
This delicacy for six was imagined by pastry chef Nina Métayer, touched by the tragedy at Notre-Dame.
