After winning over the Gironde town with his creative, low-priced ravioles, the gastronomic maestro settles in rue Sedaine, between Bastille and Oberkampf, for a rendezvous as ephemeral as it is irresistible. Star ravioli at a bargain price

The star of the menu? Philippe Etchebest’s street food version of pan-fried foie gras raviole with creamy mushroom sauce. But gourmets can also choose from three savory recipes:
- Foie gras, the irresistible classic.
- Vegetarian, with snacked eryngii mushroom.
- La truffée, with truffled white ham and truffled mushroom cream.
On the sweet side, it’s hard to resist the lemon meringue raviole, a tangy bestseller, or the cannelée, a Bordeaux twist on the traditional canelé with vanilla bavaroise, vanilla crumble and cannelé sauce.
