In 2001, Cyril Lignac, then a young chef from Aveyron, sent his resume to the prestigious and famous Lucas Carton restaurant on Place de la Madeleine. Unfortunately, his application went unanswered, and the chef moved on. Twenty-five years of success (on television and in the kitchen) later, fate has brought him back to the restaurant’s doorstep—this time at the very top of the hierarchy.
Indeed, on September 25, Lucas Carton unveiled its new chef, Cyril Lignac. At the heart of one of the capital’s most iconic gourmet destinations, this marks a deeply symbolic return for the chef, who now owns numerous restaurants, pastry shops, and chocolate boutiques.
Cyril Lignac takes the helm at the prestigious Lucas Carton
Opened in the 19th century, Lucas Carton was one of the very first French restaurants to earn three stars in the Michelin Guide. Behind its façade overlooking the Madeleine, there are dining rooms featuring remarkable Art Nouveau woodwork by Louis Majorelle. These are, in fact, protected as historic monuments.
Backed by great chefs like Alain Senderens, the restaurant would have served as a real springboard for Cyril Lignac at the time. The chef ultimately chose a different path before opening his own restaurant and gaining widespread recognition through the TV show *Oui, Chef!* on M6 in 2005. Since then, the chef has built a full-fledged restaurant group, comprising several successful establishments.

Today, the reins of the Lucas Carton restaurant have been entrusted to him following a change in ownership. For this new chapter, the focus is on generous cuisine and a vibrant atmosphere. The menu features great classics: Burgundy snails, Noirmoutier sea bass in champagne sauce, chicken with morel mushrooms, and rum baba are among the must-try dishes.
All in all, a truly wonderful restaurant that’s getting a new lease on life—and a personal comeback for one of France’s most famous chefs!
