Let’s face it, one of the reasons we love going to Angelina’s is because of its must-have hot chocolate, called ‘L’Africain’. Made from African cocoa, whole milk, sugar and even custard, the secret recipe has been seducing connoisseurs for centuries.

Hot chocolate recipe by Sébastien Bauer, ex-Pastry Chef at Angelina Paris (until 2013)
Ingredients
– 550 g whole milk
– 150 g superior 70% dark chocolate
– 200 g whipped cream
Recipe steps:
- Cut the vanilla pod lengthwise and remove the seeds.
- Boil the milk with the vanilla and leave to infuse, covered, for a few minutes, then remove the pod.
- Whisk in the 70% dark chocolate.
- Depending on your taste, you can continue cooking or not.
- The longer you cook, the thicker and more velvety the hot chocolate will be.
- Serve in the container of your choice, with whipped cream on the side.
Angelina’s recipe for creamy hot chocolate by Ladycoquillette
For 2 to 3 cups of hot chocolate, preparation 15 min.
- 25 cl whole milk
- 25 cl full-fat cream
- 100 g dark chocolate
- 50 g milk chocolate
- 1 vanilla pod, split and scraped.
To serve: whipped cream or homemade chantilly, cocoa powder.
- Bring the milk and cream to the boil in a saucepan, with the vanilla pod and seeds scraped out. Remove from the heat, cover the pan and leave to infuse for 2 minutes.
- Add the chopped chocolates to the hot milk. Mix well. Return the saucepan to moderate heat, and leave to thicken gently for 5 to 10 min, stirring constantly.
- Remove from the heat when the consistency suits you (more or less liquid, depending on your taste -> I prefer chocolate that’s a little thick and creamy).
- Serve the hot chocolate immediately, with a little homemade whipped cream and cocoa powder for decoration.
