In summer, we love the freshness of avocados, which we love to enjoy with all kinds of sauces. At aperitif time, guacamole, an icon of Mexican cuisine, takes pride of place on the table. A must for a convivial moment with friends, and an explosion of flavours on the palate. And to spice up your homemade guacamole, why not try Cyril Lignac ‘s recipe for spicy guacamole? Spoiler alert: there’s Espelette pepper – Chef Lignac’s flagship ingredient – in the recipe!
Chef Cyril Lignac reveals the secrets of his spicy guacamole recipe:
Preparation time: 12 minutes
Cooking time: 6 minutes
Ingredients, serves 4:
- 200 g avocado (or the flesh of an avocado)
- 100 g peas
- 10 g coriander leaves
- 1 organic lime
- 1/2 teaspoon Espelette pepper
- green Tabasco
- fine salt
- tacos – crunchy and tasty – (optional)
Step 1.
Wash and chop the cilantro leaves. Keep a few for the final presentation of your guacamole.
Step 2.
In a saucepan, cook the peas in salted boiling water for 6 minutes. Drain.
Step 3.
In a salad bowl, combine the avocado flesh, Espelette pepper, cooked peas, chopped coriander, lemon juice, finely grated lime zest and salt. Then start mashing with a fork. Check the seasoning for salt and pepper. If missing, add more lemon and green Tabasco.
Step 4.
Serve your spicy guacamole in bowls, and decorate with coriander leaves. Top with lime zest for presentation, and a few tacos if you have any to hand. Enjoy.
