Who says you only need to be a chef to make beautiful Yule logs? After the recipe for the galette des rois, we’d like to invite you to make your own Yule log with a chocolate cookie roll… Hmmm, doesn’t that sound delicious? Let’s get cooking!
For the Yule log recipe, you’ll need :
For the Génoise
- 9 eggs
- 85 g flour
- 220 g sugar
For the chocolate cream
- 125 g mascarpone
- 25 cl single cream
- 65 g sugar
- 150 g chocolate shavings
Recipe steps
Step 1: make the sponge cake
- Preheat the oven to 210°C.
- To prepare the dough, pour two egg yolks, three whole eggs and 135 g sugar into a bowl. Reserve the white for the rest of the mixture. Mix well until the mixture rises, then gradually add the flour until the dough is smooth and lump-free.
- Whisk 6 egg whites until stiff, gently adding the remaining sugar (85g) in two stages.
- Fold the egg whites into your first dough. Tip: you can use a silicone Maryse to avoid “breaking” them. This keeps the pastry smooth and creamy.
- Roll out the dough on a silicone baking sheet into a rectangle, and bake for 5 minutes at 210°. If the sponge cake feels “bouncy” to the touch, it’s cooked!
- Place a damp tea towel over the sponge sheet, then turn it over so that the cookie unmolds well on the wet towel and doesn’t dry out. Leave to cool for a few minutes.
Step 2: Chocolate cream
- In a separate bowl, mix the flour, mascarpone and sugar to form a fine whipped cream. Tip: you can put the cream and bowl in the freezer a few minutes beforehand to help the chantilly rise more quickly. A successful chantilly is one that holds together and doesn’t run.
- Add chocolate shavings to the Chantilly cream for an extra touch of deliciousness.
Step 3: Setting up the Yule log
- Once the sponge cake has cooled, spread some of the cream over it and gently roll it up, like a little Sushi.
- Use the remaining cream to decorate the Yule log and add a touch of creaminess.
- For the decoration, let your imagination run wild: chocolate shavings, candies, chocolate figurines, multicolored confetti…
- Let stand in a cool place for at least 30 minutes before serving. Serve with a scoop of vanilla ice cream!
