Just a stone’s throw from the Seine, Yushin has established itself as one of the best addresses for Japanese gastronomy in the Paris region. Far from the usual sushi addresses, this restaurant in Neuilly-sur-Seine offers an experience both sober and intense: a veritable omakasé, where the chef composes for you a succession of sushi and sashimi of a finesse rarely seen in Paris.
Behind the counter, chef Shuhei Yamashita, a graduate of Kinugawa Vendôme and RAN, showcases his technical mastery and rare elegance. Trained between Japan and the capital, he defends a simple vision: to sublimate fish through gesture, without ever distorting it. Behind the counter, he meticulously works with his knife, in a respectful silence where every movement counts. The result is refined creations that are as aesthetically pleasing as they are delicious.
At Yushin’s, there’s no long menu. You sit at the counter, facing the chef, and let yourself be guided. The omakasé is served in several courses, alternating between melt-in-the-mouth nigiri, sashimi sliced to the second, and seasonal hot plates: yellowtail, fatty tuna, caramelized eel or lightly seared mackerel.
The ambiance is a reflection of the place: minimalist, bright and soothing. If the counter is a kind of theater, a few tables complete the room for those who prefer a more intimate meal.
