Chef Cyril Lignac is opening a new culinary spot in the heart of the Left Bank. Named Dragon, this establishment breaks away from traditional bistronomy to introduce a highly original concept that’s all the rage right now: a bar dedicated to hand rolls—those Japanese rolls assembled and served right before your eyes. Discover this magnificent spot!
A hand roll bar by Cyril Lignac
Behind the display case showcasing mouthwatering pieces of bright red tuna, the chefs craft delicious hand rolls right before your eyes in just a few minutes—the kind of sushi you can enjoy without chopsticks. The menu features classic options like salmon or spicy tuna rolls, crispy shrimp rolls, and even more refined selections such as Wagyu beef.
Ever-changing menus and custom mixology
For guests wishing to sample a variety of flavors, the restaurant offers tasting menus ranging from three to six pieces. The full tasting menu, priced at 45 euros, features six hand rolls: salmon, bluefin tuna, spicy tuna, black cod, sea bream, and avocado. In addition to hand rolls, the kitchen team explores other textures with flambéed crudos, crispy rice chips topped with tartare, and small hot dishes such as eggplant glazed with miso sauce.
From the central station, all of the restaurant’s house cocktails are served. The bartenders craft bold and distinctive creations there, such as a surprising Wasabi Margarita that combines tequila with the spicy notes of the Japanese root, shaken and served over a large block of clear ice.
A surprising spot you’re going to love!
